I know you visited Di Fara, and good for you for aspiring to his ideals. But I have a secret to tell you... Dom the pizza maker is an old man who has become overwhelmed with the ridiculous foodie crowds that have been steadily building over the last 10 years and as a result he sometimes burns the pizza.That's not intentional. You shouldn't try to copy that part of his pizzamaking, as pizza #4 illustrates.Dark brown = yes. Burned/black = no.
